Ingredients:
- 200g soba noodles
- 2 chicken breasts, cooked and sliced
- 1 cup blueberries
- 1/2 cucumber, thinly sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup toasted sesame seeds
- For the dressing:
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
Instructions:
Cook soba noodles according to package instructions, then rinse under cold water and set aside
In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic to make the dressing
