Best Pulled Pork Nachos

Smothered in barbecue sauce, soft and flavorful pulled pork shoulder is served on crispy tortilla chips with melted cheddar cheese to create the ultimate pulled pork nachos. Finished with guacamole, sour cream, cilantro, jalapeos, and fresh tomatoes for a flavor explosion

Ingredients:

  • 4 lbs pork shoulder, boneless
  • 2 cups barbecue sauce
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeos
  • 1/4 cup chopped fresh cilantro
  • Sour cream for topping
  • Guacamole for topping

Instructions:

Rub the pork shoulder with cumin, paprika, chili powder, salt, and pepper

Place the pork in the smoker and cook at 225F for about 6-8 hours or until it reaches an internal temperature of 190F

While the pork is smoking, saut the chopped onion and minced garlic until translucent

Add barbecue sauce and simmer for 10 minutes

Once the pork is done, shred it using two forks and mix it with the barbecue sauce mixture

Preheat your oven to 375F

Arrange tortilla chips on a baking sheet

Top with the pulled pork mixture, shredded cheddar cheese, diced tomatoes, and sliced jalapeos

Bake in the oven for 10-15 minutes or until the cheese is melted and bubbly

Remove from the oven, sprinkle with chopped cilantro, and add dollops of sour cream and guacamole

Serve immediately and enjoy
