Ingredients:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 cup dark chocolate chips
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, mix the mashed bananas, melted coconut oil, and honey or maple syrup until well combined
Add the rolled oats, whole wheat flour, baking soda, and ground cinnamon to the banana mixture
Stir until all the ingredients are fully incorporated
Fold in the dark chocolate chips into the cookie dough
Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet
Flatten each cookie slightly with the back of the spoon or your fingers
Bake the cookies in the preheated oven for about 12-15 minutes or until they turn golden brown around the edges
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, enjoy these delicious and healthy banana oatmeal chocolate chip cookies
