This Buttermilk Sweet Potato Casserole Salad is a new and tasty take on the traditional Thanksgiving casserole. Buttermilk dressing, sweet potatoes, and pecans come together in this dish to make something rich and creamy. A great side dish to go with your holiday meal.
Ingredients:
- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup buttermilk
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup chopped green onions
- 1/4 cup chopped celery
- 1/4 cup chopped pecans
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
For about 15 minutes, boil the sweet potato cubes in salted water until they are soft
Let it cool down after draining
Whisk the buttermilk, mayonnaise, and Dijon mustard together in a large bowl until everything is well mixed
Put the green onions, celery, pecans, and cooled sweet potatoes in the bowl
Carefully mix everything together to cover everything in the dressing
Add salt and pepper to the salad as needed
Put it in the fridge for at least an hour to let the flavors mix
