Cheesy Cauliflower Muffins

These Cheesy Cauliflower Muffins are delicious and dont have any gluten or grains. They are a tasty treat or side dish because they are full of cauliflower and two kinds of cheese.

Ingredients:

  • 2 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • 3 eggs
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your oven to 375F 190C and grease a muffin tin with cooking spray

Steam the cauliflower florets until they are tender

Drain and allow them to cool

In a large mixing bowl, combine the steamed cauliflower, shredded cheddar cheese, almond flour, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper

In a separate bowl, whisk the eggs until well beaten

Add the beaten eggs to the cauliflower mixture and stir until everything is thoroughly combined

Spoon the mixture into the greased muffin tin, filling each muffin cup almost to the top

Bake in the preheated oven for about 20-25 minutes, or until the muffins are set and golden brown on top

Allow the muffins to cool for a few minutes in the tin, then transfer them to a wire rack to cool completely

Serve these cheesy cauliflower muffins as a delicious gluten-free and grain-free snack or side dish
