Ingredients:
- 1 pound boneless chicken tenders
- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- Coconut oil for frying
Instructions:
The shredded coconut, almond flour, paprika, minced garlic, sea salt, and black pepper should all be combined in a mixing bowl
To make the coating mixture, thoroughly mix
Make sure every chicken tender is completely covered after dipping it into the beaten eggs
Gently press the coconut mixture onto the egg-coated chicken tender, making sure it sticks to the chicken
In a skillet set over medium-high heat, warm the coconut oil
Pour in enough oil to completely fill the skillet
The coated chicken tenders should be carefully placed in the skillet once the oil is hot
The chicken tenders should be cooked through and golden brown after 3 to 4 minutes of cooking on each side
After taking the chicken tenders out of the skillet, place them on a plate covered with paper towels to absorb any extra oil
