This vegan recipe turns cauliflower into tasty steaks that are flavored with fragrant curry powder and topped with a bright cilantro pesto. This dish is filling and healthy, making it perfect for a meal.
Ingredients:
- 1 large head cauliflower, sliced into steaks
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- Salt and pepper to taste
- 1 cup fresh cilantro leaves
- 1/4 cup almonds, toasted
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
Set the oven to 425F 220C and heat it up
On a baking sheet, put the cauliflower steaks
Put some olive oil on top and then add curry powder, salt, and pepper
For 20 to 25 minutes, or until the cauliflower is soft and slightly browned around the edges, roast it in an oven that has already been heated up
Get the cilantro pesto ready while the cauliflower roasts
Put garlic, toasted almonds, cilantro, lemon juice, and extra virgin olive oil in a food processor and blend them together
Mix until its smooth
Add pepper and salt to taste
When the cauliflower is done, take it out of the oven and put it on plates to serve
