Mississippi Mud Potatoes are a cheesy and flavorful twist on traditional roasted potatoes. With a crispy exterior and a gooey, cheesy interior, these potatoes are sure to be a hit at any meal.
Ingredients:
- 6 medium potatoes, washed and cubed
- 1/4 cup melted butter
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 2 green onions, chopped
Instructions:
Preheat oven to 375F 190C
In a large bowl, combine melted butter, Parmesan cheese, garlic powder, paprika, salt, and black pepper
Add cubed potatoes to the bowl and toss until evenly coated
Spread potatoes in a single layer on a baking sheet lined with parchment paper
Bake for 30-35 minutes, or until potatoes are tender and golden brown
Remove from oven and sprinkle shredded cheddar cheese and crumbled bacon over the potatoes
Return to the oven and bake for an additional 5 minutes, or until cheese is melted
Remove from oven and garnish with chopped green onions before serving
