A tasty and high-protein sandwich that is loaded with rice and curried garbanzo beans, ideal for an easy and filling dinner.
Ingredients:
- 1 cup cooked garbanzo beans
- 1 cup cooked rice
- 1/2 cup diced tomatoes
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 1 teaspoon curry powder
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 whole wheat sandwich buns
Instructions:
Heat the olive oil in a skillet over medium heat
Add the chopped onions and garlic, and saut until they become soft
Add turmeric, coriander, cumin, and curry powder and stir
Cook until fragrant, one to two minutes
Cook the diced tomatoes until their juices are released
Cooked rice and garbanzo beans should be added to the skillet
Toss to combine well
To taste, add salt and pepper for seasoning
Simmer for five more minutes to let the flavors combine
