Gluten-Free Pork Belly Tacos

With their fresh and colorful toppings, these Gluten-Free Pork Belly Tacos are a delicious treat that will make your mouth water. Great for a quick and filling meal

Ingredients:

  • 1 lb pork belly, sliced into thin strips
  • 2 tablespoons gluten-free soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 gluten-free corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup gluten-free sour cream
  • 1/4 cup gluten-free salsa

Instructions:

In a bowl, combine the gluten-free soy sauce, honey, rice vinegar, garlic powder, paprika, cumin, salt, and pepper to create a marinade

Place the pork belly strips in a resealable plastic bag and pour the marinade over them

Seal the bag and refrigerate for at least 30 minutes, or marinate overnight for best results

Preheat your grill or skillet to medium-high heat

Remove the pork belly strips from the marinade and grill them for about 2-3 minutes per side, or until they are cooked through and slightly caramelized

Warm the gluten-free corn tortillas on the grill or in a dry skillet for about 30 seconds per side

To assemble the tacos, place a few slices of grilled pork belly on each tortilla

Top with shredded lettuce, diced tomatoes, diced red onion, and fresh cilantro

Drizzle gluten-free sour cream and salsa over the toppings
