Grilled Ratatouille Tartine

This Grilled Ratatouille Tartine is a great way to enjoy the delicious tastes of summer. A tasty open-faced sandwich is made with colorful grilled vegetables on top of rustic bread covered in creamy ricotta. Adding a drizzle of balsamic glaze is the perfect way to finish.

Ingredients:

  • 1 small eggplant, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices rustic bread
  • 1 cup ricotta cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon balsamic glaze

Instructions:

Warm up the grill over medium-high heat

Use olive oil to coat the eggplant, zucchini, yellow squash, red bell pepper, and red onion

Add pepper and salt

About 4 to 5 minutes on each side, grill the vegetables until they are soft and slightly charred

Toast the bread until it turns golden brown on the grill

Put chopped basil and minced garlic in a bowl and mix the ricotta cheese the same way

Add pepper and salt

Place the ricotta mixture on top of the toasty bread

Place the grilled vegetables on top of the bread that has been covered in ricotta

Add a balsamic glaze and more fresh basil on top to serve

Serve right away and enjoy
